Ingredients:

Coconut Water Layer (First Layer):

3 tbsp Freeze Dried Coconut Water Powder


3 tbsp White Sugar


1-1/2 tsp Agar Agar Powder (Gelatin)


2 cups Water


Coconut Milk Layer (Second Layer):

 ½ Cup Coconut Milk Powder


1 Tbsp Freeze Dried Coconut water Powder


3-1/2 tbsp White Sugar


Pinch Himalayan salt


1-1/2 tsp Agar Agar Powder (Gelatin)


1 cup water


Directions:

For making the first layer. Place all ingredients in a small pot, mix well, and bring to a boil (stirring frequently) on medium heat. Remove the pot from heat.


Place the mixture gently into a rectangular mold (or deep plate), spoon off any bubbles, and let it sit at room temperature.


For making the second layer. Add coconut water, sugar, agar agar powder, and water to another small pot and mix well on medium heat until it gets hot.


Add coconut milk powder, and a pinch of salt, mix well and bring to a boil (stirring frequently) on medium heat.


Check the first layer to ensure the top of the jelly is set but still warm (This is the perfect consistency to put in the second layer). If it is still liquidy, put jelly in the refrigerator for 2 minutes.


Add a second layer mixture (while it is steaming hot) on top of the first layer by pouring the mixture over the back of a spoon and letting it drip gently onto the edges of the first layer (If you pour too quickly, it will break the first layer).


Let it completely cool down (or you can put it in the refrigerator for 3 to 4 hours), then unmold on a flat surface, cut into your favorite shapes and serve cold.
